Asari are all female in appearance to humans but are in fact both genders at varying times in their lives. If you play Mass Effect 2 go to the Bar on Iillium where the Asari Matriarch bartender explains it very simply and clearly. Asari generally do NOT mate with one another, they use genetic material from other races to improve their own genetic diversity although the offspring of such unions will ALWAYS be Asari in appearance and physiology. The Asari in question can be either parent (the bartender explains "she" was once the father of a pureblood daughter but when they reach a certain age they become Matriarchs. They have an average lifespan of around one thousand years and (according to Liara, the bartender and codex) generally become Matriarchs for the last two centuries of their lives.

Added theory, Asari take female human form so we will be attracted to them. Blue skin for Salarians and cartilage forms on the head for Turians.
