Mention Shepard or a letter message is good enough. There should be no face reveal. Maybe their helmet being picked up with them being off screen would be preferable.

Any spare resources like eezo, platinum, etc. are added to the Normandy war assets in me3.
MEA was made by the Montreal team who did the DLCs since ME2. The had no experience in making a full blown game.
Though the game was being developed for 4 years, the actual build of the game was about less than 2 years. I could be wrong about this.

I've never heard of this glitch. I haven't heard anything. You might want to give it a try.
Shepard will mention that they've finished the Collectors if you choose to let him die.
I'll speak for what I've experienced or seen. In Zaeed's LM if you finished game and you saved the people, Shepard can let Zaeed die since the Collectors are gone.

Yeah I forgot to put that. Shepard would arrive before Anderson. Basically, a reversal role from what we've played in Mass Effect 3.
What if Shepard never talked to the Catalyst. It was Anderson that made the decision to destroy the Reapers. Shepard's fate is unknown.
I think this might work for how they can continue the story for the next game.

IMO not really. Each color is more of the representation of the choice of the player.
^ in the citadel party in me3, if Shepard is a class with biotic powers, the point about Vega's muscles and Liara biotic, Shepard makes mention about his/her biotic.
So given that Shepard being an engineer would know some short cuts on resources or updates. Heck, you can even say that Shepard helped with said updates minimizing any extra needed resources.
Also the engineer class in ME2 reduces the amount of resources need for upgrades, weapon creation, ship upgrades, etc.
